A while ago I declared these Coconut Oil Chocolate Chip Cookies to be the best chocolate chip cookies ever. Since I’m often asked to bring desserts to potlucks or parties, those cookies (or depending on time, these Chocolate Chip Cookie Bars) are some of my go-tos. Both are simple, classic and everybody loves them. I especially love the flavor from the coconut oil in the cookies but also love the ease of baking the cookie bars. So why not combine the two (and toss in some M&Ms for good measure) to make Coconut Oil M&M Cookie Bars!

Before I tell you about this Mocha Fudge recipe, I have to tell you about the first Valentine’s Day that Mike and I celebrated together. I had the day off of work, so I planned to make a special dinner. Artichoke Crostini, filet mignon with a red wine sauce, salad with homemade vinaigrette and chocolate mousse were on the menu. I had the entire day to shop, cook and get everything ready. Easy right? Well, I should also mention that it happened to be my first time making all of the recipes (except for the vinaigrette, which is an original)….

Chewy, chocolaty and delicious, these Coconut Oil Chocolate Chip Cookies are the best chocolate chip cookies ever!

I have tried many different chocolate chip cookie recipes in my day. There was a fantastic recipe I used to make when I was a kid, and then my grandma’s recipe, plus many others in between. There were pros and cons to each recipe, but in the end they were chocolate chip cookies and therefore delicious, right? Then one day we had our real estate agent, and dear friend, over for a visit. She generously brought us an oven mitt, a bag of chocolate chips and a recipe. The recipe was for these Coconut Oil Chocolate Chip Cookies, which ended up being the best chocolate chip cookies I have ever had in my life!
