A while ago I declared these Coconut Oil Chocolate Chip Cookies to be the best chocolate chip cookies ever.  Since I’m often asked to bring desserts to potlucks or parties, those cookies (or depending on time, these Chocolate Chip Cookie Bars) are some of my go-tos.  Both are simple, classic and everybody loves them.  I especially love the flavor from the coconut oil in the cookies but also love the ease of baking the cookie bars. So why not combine the two (and toss in some M&Ms for good measure) to make Coconut Oil M&M Cookie Bars!

These Coconut Oil M&M Cookie Bars are nothing short of amazing. I am hooked on baking with coconut oil!  The flavor is so delicious in this recipe with the brown sugar and chocolate, in this case M&Ms.   These bars have the perfect chewiness. They can be made in minutes, since there is no rolling out individual cookies, no frosting, no baking sheets required.

First, measure out the dry ingredients and chocolate candies.  Next cream sugar with coconut oil, add remaining wet ingredients and beat until combined.  Last, stir in dry ingredients with coconut oil mixture and fold in the M&Ms.  Spread in a pan and bake. Easy!

When coming up with this recipe, of course the light bulb moment occurred while I was at the store (always when I don’t have my blog notebook with me). I quickly whipped out my smartphone to do some recipe research. I was able to compare recipes, make a list and come up with a plan for Coconut Oil M&M Cookie Bars.

While I will forever stand by the statement that those Coconut Oil Chocolate Chip Cookies are the best cookie ever, Coconut Oil M&M Cookie Bars are the best cookie bar recipe ever.  Delicious, easy, and perfect for any occasion!

Coconut Oil M&M Cookie Bars

Yields: 36 bars
Ingredients
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups packed brown sugar
  • ½ cup coconut oil, melted
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup mini M&M chocolate candies
Instructions
  1. Preheat oven to 350F degrees. Spray a 13x9-inch pan with cooking spray and set aside.
  2. In a small bowl, whisk together the flour, baking powder and salt.
  3. In a large bowl, cream brown sugar, coconut oil, eggs and vanilla.
  4. Stir flour mixture to brown sugar mixture. Add M&M candies and stir to combine.
  5. Spread into prepared baking pan. Bake for 15 to 18 minutes. Cool on wire rack and cut into squares.
Notes
½ cup melted butter can be used in place of the coconut oil, if preferred.
