Coconut Oil M&M Cookie Bars

Yields: 36 bars
- 1½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1½ cups packed brown sugar
- ½ cup coconut oil, melted
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 1 cup mini M&M chocolate candies
- Preheat oven to 350F degrees. Spray a 13x9-inch pan with cooking spray and set aside.
- In a small bowl, whisk together the flour, baking powder and salt.
- In a large bowl, cream brown sugar, coconut oil, eggs and vanilla.
- Stir flour mixture to brown sugar mixture. Add M&M candies and stir to combine.
- Spread into prepared baking pan. Bake for 15 to 18 minutes. Cool on wire rack and cut into squares.
½ cup melted butter can be used in place of the coconut oil, if preferred.
