Whenever I think about my grandma, aside from her baking prowess, two things come to mind.  Wherever we went, we were always together, like joined at the hip together.  I thought she was always following me, and I overheard her say how she thought it was cute how I always followed her.  One thing for certain was how much we both loved coffee!  After dinner, she and I would often enjoy a little cup of decaf together.  I remember one of the last Christmases with her, we were sitting at the table, holding our dainty cups of coffee.  She looked at me and not so subtly whispered ‘you know what we need with coffee?  chocolaaaaaaate!’  It makes me smile just to think about it.  She was so funny and so right on!  The combination of chocolate and coffee is up there with chocolate and peanut butter or chocolate and milk (or chocolate and chocolate!)    …

In the months leading up to the holidays, there have been dessert recipes popping up all over the place.  While I’m never one to complain about a good dessert, after a while I start craving healthy recipes.  Lately it has been all about the avocado.  My kids love avocados plain, and I’ve been whipping them into smoothies, as pasta sauce, in place of mayo in sandwiches and salads, even using avocados in place of butter in baking!  Since over 75% of fat in an avocado is unsaturated, it’s a great substitute for foods that are  high in saturated fat.

While I frequently make delicious avocado recipes at home, it seems very few have made it on the blog.  That will change soon, as I get these recipes ready to share with you.  In the meantime I gathered over 75 wonderful avocado recipes from my favorite blogger friends.  Enjoy!  …

This Peppermint Brownie Sundae starts with one of my favorite fudgy brownie recipes.  The brownie is sturdy enough to withstand the ice cream topping without becoming soggy yet it melts in your mouth with fudgy goodness.  A little peppermint extract to gives the brownies some Holiday flair, but that is optional.   You get plenty of peppermint from the delicious peppermint ice cream!  I wait all year for my favorite Edy’s Slow Churned Peppermint Wonderland ice cream that is a limited edition available through December.  The fact that it is ridiculously rich and creamy with only half the fat and 1/3 fewer calories than regular ice cream is just a bonus.
