Almond Butter Oatmeal Breakfast Cookies are a healthy breakfast treat made with simple, wholesome ingredients such as bananas, almond butter, and oatmeal. {vegan}
We are always looking for quick and easy breakfasts – something healthy that can be eaten on-the-go. And when that means eating (healthy) cookies for breakfast, even better! When I stumbled upon these vegan breakfast cookies, I could not get to the kitchen fast enough to whip up a batch. Almond Butter Oatmeal Breakfast Cookies are really easy to make, using ingredients commonly found in the pantry. They taste even better the second day (or third, if they last that long). Since they are so moist and chewy, I stored them in the refrigerator. They were really tasty chilled as well! From the bananas to the oatmeal to the almond butter, Almond Butter Oatmeal Breakfast Cookies are like a healthy bowl of oatmeal in cookie form….

Easy Raspberry Cheesecake Crostini is a creamy, fruity snack (or appetizer) that is as tasty as it is simple to make.
Disclosure: I received free product and compensation for this post by Smucker’s® as part of the Mom it Forward Blogger Network. All opinions are my own.
This winter has been one of the snowiest I can remember. As if we didn’t already have enough snow, a few days ago, we were blessed with another 12 inches in less than 12 hours. By now, I am yearning for the abundance of fruits, vegetables and sunshine of summer. While we still have a several months to go, I am turning toward other ways to satisfy those summer cravings. Easy Raspberry Cheesecake Crostini unites traditional ingredients, such as light cream cheese and Smucker’s® Natural Fruit Spread, to create the perfect pairing to spread a little sunshine on top of mini toasts. These are great for a light lunch or an after school snack, yet they are pretty enough to make for company….

Oatmeal Chocolate Chip Pancakes are a hearty oatmeal buttermilk pancake studded with chocolate chips!

Every Valentine’s Day, I like to make something special for my family, whether it’s a breakfast treat or a special dessert. These Oatmeal Chocolate Chip Pancakes combine the two – they taste like a chewy, oatmeal chocolate chip cookie in pancake form. This recipe is adapted from my Oatmeal Raisin Pancake recipe, so they are a bit healthier, with a little decadence from the chocolate chips. For the ultimate indulgence, I used Ghirardelli Bittersweet Chocolate Baking Chips (60% Cacao). The smooth, rich bites of chocolate studded throughout the oatmeal buttermilk pancakes really made them delicious! In fact, I used these same baking chips in my Chocolate Malt Bread Pudding recipe, and they really add such a deep, wonderful chocolate flavor. …

Easy Date Bars are a date-filled oatmeal bars inspired by a childhood favorite. They taste similar to my grandma’s recipe, only made a little healthier and are super quick and easy to make!
One of my favorite cookies from childhood is a recipe my grandma used to make, called Trilbies. They are a soft, oatmeal cookie with a date filling. They were SO good. I do have her recipe, but I remember she always complained about how much trouble they were to make. They always end up last on my holiday baking list and never get made. This year, I decided to take my favorite aspects of the recipe – dates and oats – and turn them into simple Easy Date Bars! They taste pretty darn close to the beloved cookie – close enough anyway, because these Easy Date Bars are super easy to make!…
