This Roasted Red Pepper Hummus recipe can be made in minutes using common pantry ingredients. Not only does it taste fresh and delicious, but it is also a great recipe to get the kids involved. My kids love to pour in the ingredients and (of course) power the food processor. (Mama, can I pulse it just one more time pleeeeeeease?)

Chickpeas and tahini give this Roasted Red Pepper Hummus that traditional hummus flavor, while the paprika and basil, combined with the lemon juice and garlic, give it a little kick that goes so well with the roasted red peppers.  Served with your favorite vegetables, pitas chips, pretzels or spread on sandwiches or wraps, this healthy Roasted Red Pepper Hummus is versatile, delicious and did I mention easy to make?

Chickpeas (aka garbanzo beans) are a great canned food item to have on hand at all times. They are so versatile and can be used in many recipes, including many hummus varieties (find all of my hummus recipes here!)

Roasted chickpeas make a great snack and are also easy to make (try this family favorite recipe for Honey Roasted Chickpeas with Sea Salt). This Chocolate Chickpea Cake is a delicious way to enjoy chickpeas for dessert!

Roasted Red Pepper Hummus

Ingredients
  • 1 can (15 ounces) garbanzo beans (chickpeas), rinsed and drained
  • ⅓ cup tahini
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • ½ teaspoon dried basil (adjust to taste)
  • ½ teaspoon paprika (adjust to taste)
  • ½ cup roasted red peppers, roughly chopped
Instructions
  1. In a food processor, put garbanzo beans, tahini, lemon juice, garlic, basil and paprika and process until smooth. Add roasted red peppers and continue to process until smooth. Taste and adjust seasonings as desired.
