Baked Garlic Cheddar Chicken

Baked Garlic Cheddar Chicken is an easy recipe to transform those plain chicken breasts into a healthier garlic cheddar cheesy family favorite made in less than 30 minutes!

When it comes to feeding my family, there are two things guaranteed to be winners at our table – chicken and cheddar cheese.  Bonus points if it can also be something healthy, fast and easy. Sound familiar?  I know how popular chicken and cheese can be, especially with kids, so I have been on a mission to combine the two into a healthier recipe.  Most recipes I found use way too much butter for my liking, so I looked through the some of my healthier baked chicken recipes to come up with a lighter version of Baked Garlic Cheddar Chicken. In lieu of dipping the chicken in butter, I used a similar egg white mixture from my Lighter Pretzel Chicken.  Then I took a pinch here and a dash there to come up with a coating that is a delicious combination of garlic, finely shredded cheddar cheese, Panko breadcrumbs, a little Parmesan cheese and some seasonings.  It works best to really press the coating on to the chicken and then sprinkle a little extra over the top before baking.
While I typically use Panko breadcrumbs, any breadcrumb or cracker crumbs (like buttery or cheesy crackers!) would work well.  Want something with a little heat?  Simply add some crushed red pepper flakes to the mixture.  There is a lot of flexibility with this recipe to customize it to your liking.  The result is a super easy recipe that is guaranteed to please!  Best of all, Baked Garlic Cheddar Chicken can be made in less than 30 minutes, perfect for a weeknight or any time you need a quick dinner fix.
Baked Garlic Cheddar Chicken
Yields: 2 servings
  • Cooking spray
  • ⅔ cup Panko bread crumbs (or cracker crumbs)
  • 2 cloves garlic, minced
  • ½ cup shredded cheddar cheese
  • 2 tablespoon grated Parmesan cheese
  • ½ teaspoon dried oregano
  • crushed red pepper, to taste (optional)
  • 1 egg white
  • 1 tablespoon Dijon mustard
  • Salt and black pepper, to taste
  • ½ pound boneless, skinless chicken breast
  1. Preheat oven to 425°F. Line a cookie sheet with foil sprayed with cooking spray and set aside.
  2. In a shallow bowl, combine bread crumbs, garlic, cheddar, Parmesan, oregano and crushed red pepper, if using. In a separate shallow bowl, whisk together egg white and mustard.
  3. Season chicken with salt and pepper, as desired. Dip chicken in egg white mixture and then chicken in bread crumb mixture, pressing the coating to help it adhere. Place on prepared baking sheet and repeat with remaining chicken.
  4. Bake for 15 to 18 minutes, or until coating is browned and chicken is thoroughly cooked.
In this recipe I used Tyson® Fresh Boneless Skinless Chicken Breasts.  Tyson Fresh Chicken Boneless Skinless Chicken Breast Tenderloins would also work well in this recipe.  What I love about Tyson Fresh Chicken is that each piece is hand-trimmed, which really is a time-saver.  Plus Tyson Fresh Chicken is the next best thing to being fresh off the farm because it arrives at the store fresh within days from leaving the farm.

    I recently marinated chicken breast in greek yogurt and fresh orange juice. My husband grilled it and it was amazing. We do chicken alot of different ways, but for now that would be my favorite.

    My current favorite chicken recipe is from an American Test Kitchen cookbook, involving slow-cooked boneless chicken breads that are finished in a sauce made with dried apricots and apricot jam. Delicious!
