Preheat oven to 425°F. Line a cookie sheet with foil sprayed with cooking spray and set aside.
In a shallow bowl, combine bread crumbs, garlic, cheddar, Parmesan, oregano and crushed red pepper, if using. In a separate shallow bowl, whisk together egg white and mustard.
Season chicken with salt and pepper, as desired. Dip chicken in egg white mixture and then chicken in bread crumb mixture, pressing the coating to help it adhere. Place on prepared baking sheet and repeat with remaining chicken.
Bake for 15 to 18 minutes, or until coating is browned and chicken is thoroughly cooked.
