As much as I love grilling this time of year, I can never get enough baked chicken recipes, like this Baked Garlic Mustard Panko Chicken.  It is a healthy chicken dish that is quick and easy to prepare and then bakes in the oven for about 15 minutes.  That is just enough time to make a garden salad, set the table, grab a glass of wine, and still have a moment to sit until the timer goes off!  

To make Baked Garlic Mustard Panko Chicken, first prepare the coatings (bread crumb mixture and mustard mixture).  Then simply spread the mustard mixture over the chicken and  coat with the bread crumb mixture and pop in the oven to bake.  The result is a delicious Baked Garlic Mustard Panko Chicken dish that is a guaranteed winner.  This recipe is written to serve two, however it can easily be adjusted as needed.  Enjoy!

Baked Garlic Mustard Panko Chicken
 
Yields: 2 servings
Ingredients
  • 2 (4-ounce) boneless, skinless chicken breasts
  • ¼ cup Panko bread crumbs
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried Italian herb seasoning
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • Cooking spray
Instructions
  1. Preheat oven to 425°. Line a baking sheet with foil sprayed with cooking spray and set aside.
  2. In a shallow bowl, combine bread crumbs, cheese and Italian herb seasoning.
  3. In a separate bowl, combine mustard and garlic.
  4. Spread mustard mixture over each chicken breast and then dip into bread crumb mixture to coat thoroughly. Place on prepared baking sheet. Bake for 15 to 20 minutes, or until chicken is thoroughly cooked.
