Almond Butter Waffles are a light, buttery, buttermilk waffle made with almond butter for a delicious and healthy breakfast!

We recently discovered the wonders of almond butter (or rather, got the OK from the doctor to try it).  As a mom, I am so happy to cross almonds off the list of potential allergens.  As a food blogger, I am so excited – a new ingredient to play with in the kitchen!  My list of recipes to make got long, but at the top of the list was Adam’s favorite – either waffles or pancakes.  I decided to experiment with my Sunbutter Waffle recipe, which is a solid buttermilk waffle recipe that we enjoy often.  However, this time, not only did I swap out the sunbutter for almond butter, but I also decided to use melted I Can’t Believe It’s Not Butter ® Deliciously Simple ™  spread in place of the oil.

 I Can’t Believe It’s Not Butter ® Deliciously Simple ™ is made with simple ingredients like nonfat yogurt and vegetable oil and contains no artificial preservatives.  I wanted a rich, buttery-tasting waffle, but because I make these waffles often, I wanted to use something that we could enjoy every day (and not feel guilty about it).   Deliciously Simple™ is smooth, creamy and adds a richness to the waffles that really complemented the buttermilk and almond butter.  In fact, after Adam had the first bite of his waffle, he exclaimed ‘These waffles are so, so, so, so, so, so, so, so good!’  Yep, there were 8 “so”s in there.  Almond Butter Waffles are definitely going to become a regular in the rotation!

Almond Butter Waffles
 
Yields: 6 servings
Ingredients
  • 1¾ cups whole wheat pastry flour (or all-purpose flour)
  • 2 tablespoons packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 4 tablespoons I Can't Believe It's Not Butter® Deliciously Simple™, melted
  • 6 tablespoons almond butter
  • 2 cups buttermilk, well-shaken
  • 2 eggs
  • 1 teaspoon vanilla extract
Instructions
  1. In a large bowl, whisk together the flour, sugar, baking powder and baking soda.
  2. In a small bowl, beat melted I Can't Believe It's Not Butter® Deliciously Simple™ and almond butter, until smooth. Add buttermilk, eggs and vanilla, and whisk until combined.
  3. Add buttermilk mixture to flour mixture and fold until combined. Let sit for 10 minutes.
  4. Meanwhile, preheat waffle iron. Cook waffles according to the manufacturer directions for your waffle iron.
