In the months leading up to the holidays, there have been dessert recipes popping up all over the place.  While I’m never one to complain about a good dessert, after a while I start craving healthy recipes.  Lately it has been all about the avocado.  My kids love avocados plain, and I’ve been whipping them into smoothies, as pasta sauce, in place of mayo in sandwiches and salads, even using avocados in place of butter in baking!  Since over 75% of fat in an avocado is unsaturated, it’s a great substitute for foods that are  high in saturated fat.

While I frequently make delicious avocado recipes at home, it seems very few have made it on the blog.  That will change soon, as I get these recipes ready to share with you.  In the meantime I gathered over 75 wonderful avocado recipes from my favorite blogger friends.  Enjoy!  …
