This easy recipe for Spicy Black Bean Quesadillas takes only minutes to make! First start by firing up the grill to cook MorningStar® Farms Spicy Black Bean Burger: America’s #1 Veggie Burger, alongside your favorite grillables, until grilled to perfection.


Next cut the burger into pieces and sprinkle over a tortilla, top with remaining desired quesadilla ingredients, such as spinach, corn and cheese, and then cover with another tortilla. Then simply put in the oven to bake on a lined cookie sheet for 10 minutes. It is just enough time to prepare any sides or accompaniments for the quesadillas, set the table, or finish preparing the rest of the feast! Not only does baking quesadillas free your hands for tasks, but it is a healthier option that still tastes great!

Our freezer is regularly stocked with MorningStar Farms Spicy Black Bean Burgers, which we enjoy as a breakfast burger, a traditional burger, or even just plain with a sprinkling of cheese (that’s my favorite!) However, as I was strolling through the Walmart freezer aisle, MorningStar Farms® Veggie Dogs caught my eye. I had not tried them before (or any kind of hot dog before), but thought they would be perfect to make little Veggie Dog Bites for something to nibble on. The Veggie Dogs cooked up quickly, I cut them in bite-sized pieces and threaded them on a toothpick in between hot dog bun bites. They’re ready to dip in ketchup.  So fun!

Spicy Black Bean Quesadillas
Yields: 4
  • 4 MorningStar Farms® Spicy Black Bean Burger
  • 8 8-inch tortillas
  • 1 cup corn kernels
  • 1 cup chopped fresh spinach
  • 1 cup shredded cheese (colby jack or cheddar)
  1. Preheat oven to 400F degrees. Line a cookie sheet(s) with parchment and set aside.
  2. Meanwhile, grill MorningStar Farms® Spicy Black Bean Burger according to package instructions. Remove from grill and cut into pieces.
  3. Place 4 tortillas on prepared baking sheets. Sprinkle each with burger crumbles, corn, spinach and cheese. Top with remaining tortillas.
  4. Bake for 8 to 10 minutes, or until cheese is melted and tortillas get crispy. Let cool for 5 minutes and then cut into wedges.
