The other night we were looking to make an easy side dish to go with our steak dinner. Mashed potatoes are always a tasty pair with steak, but I wanted to come up with something lighter and healthier.  Since August is National Olive Oil Month, I have  had olive oil on the brain lately.  It seemed like the perfect opportunity to swap butter for olive oil to make some tasty Olive Oil Mashed Potatoes.  

The recipe was easy to make and came together in about 20 minutes. First we boiled the potatoes and garlic until tender.  Then added some Parmesan cheese, milk (or broth) and olive oil and mashed it all together.  Amounts can be adjusted as desired.  Lastly add salt and pepper to taste.  What we enjoyed most about these Olive Oil Mashed Potatoes is that could actually taste potatoes!  No butter or cream was overpowering the flavors, it was just delicious potatoes enhanced with olive oil.

Olive Oil Mashed Potatoes
 
Yields: 4 to 6 servings
Ingredients
  • 2 pounds red potatoes, cut into quarters
  • 4 garlic cloves
  • 1 teaspoon salt
  • ¼ cup finely shredded Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons milk (or broth)
  • Salt and ground black pepper, to taste
Instructions
  1. In a large pot, combine potatoes, garlic and 1 teaspoon salt. Add enough water to cover the potatoes. Cover and bring to a boil. Lower heat to a simmer and cook for 10 to 15 minutes or until potatoes are fork tender. Drain and then transfer potatoes and garlic to a bowl.
  2. Add cheese, oil and milk to potatoes and then combine and mash the potatoes with a potato masher. Season with salt and pepper to taste.
