If you love that salty-sweet combination, then you will love these Chocolate Pretzel Cookies.  Studded with chopped pretzels and chocolate chips throughout, these cookies are sure to delight folks of all ages.  Chocolate Pretzel Cookies cookies take minutes to prepare, so they can easily be whipped together any time.   Plus the whole pretzel garnish on top of the cookie is just so cute!

Using pretzels in treats is a great way get that popular salty-sweet taste while being nut-free too.  I also read a tip that suggested using pretzels in place of peanuts in treats to reduce fat/calories.   While that makes sense, and cookies aren’t intended to be diet food, it’s nice to have ‘smarter’ options this time of year when indulgent treats are aplenty.  I’m a chocolate and peanut butter fanatic, but these Chocolate Pretzel Cookies definitely satisfied my peanut butter craving.  Sure it’s not peanut butter, but is there really ever a down side to pretzels?  They’re so good!

Chocolate Pretzel Cookies

Chocolate Pretzel Cookies
 
Yields: 30 cookies
Ingredients
  • 1 cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ⅓ cup granulated sugar
  • ⅓ cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips (I used mini)
  • 1 cup roughly chopped pretzels, plus 30 whole pretzels for garnish
Instructions
  1. Preheat oven to 350F degrees. Line cookie sheet(s) with parchment paper and set aside.
  2. In a small bowl, whisk flour, cocoa, baking powder, baking soda and salt.
  3. In a large bowl, beat butter and sugars for 2 minutes, or until combined and fluffy. Add egg and vanilla, and beat until combined.
  4. Add flour mixture to butter mixture and beat on low until just combined.
  5. By hand, fold in chocolate chips and chopped pretzels.
  6. Drop tablespoonfuls of batter onto prepared cookie sheet(s). Using the bottom of a glass, press down on cookies to flatten. Gently press a whole pretzels on top of each cookie.
  7. Bake for 9 to 11 minutes, or until cookies are set. Transfer parchment paper to wire rack so cookies can cool completely.
