English Muffin Grilled Cheese sandwich is a fun twist on a traditional childhood favorite…and a clever solution for my picky eater! 

Kids’ tastes in food are one of life’s great mysteries. Take cheese, for example. For the first three years of Adam’s life, cheese was one of his favorite foods.  He had cheese broiled on an English muffin for lunch almost every day.  These days, he has a ‘thing’ about cheese.  He says he doesn’t like cheese, but sometimes he wavers.  He still loves English muffins though.  So I decided to try an experiment. I decided to present his old favorite (cheese and English muffins) in the form of an English Muffin Grilled Cheese sandwich.  Served alongside a warm bowl Campbell’s Tomato soup, which is perfect for dunking or getting creative with toppings, this is sure to be a hit, right? Now I realize an English Muffin Grilled is simple and more of an idea, than an actual recipe.  Sometimes that’s just what we need when trying to feed our picky eaters!  Different and creative ways to present simple foods can be just what works, especially when using foods your kids used to like.  For example, presenting a bowl of chicken noodle soup might be met with some resistance.  However, Adam loves letters, so Campbell’s Chicken Alphabet Soup would be perfect for him!

English Muffin Grilled Cheese
  • English muffins
  • sliced cheese, any variety
  • butter spray
  • optional: any vegetables or spreads, such as tomatoes or pesto
  1. Preheat nonstick frying pan over medium heat.
  2. Split English muffin. Cover one half of the muffin with cheese and then top with the other half of the muffin. Spray the top of the muffin with butter and then place butter-side down in heated nonstick nonstick pan.
  3. While cooking, spray to of other muffins with butter spray. Cook until browned on one side and cheese starts to melt. Carefully flip sandwich and cook until the other side is browned and cheese is melted. Serve warm.
