Chocolate Caramel Coconut RITZ Cookies
Yields: 6 (1 cookie per serving)
  • 12 RITZ Original crackers (from RITZ Fresh Stacks)
  • 6 chocolate covered caramels (I used Rolo)
  • toasted coconut
  1. Preheat oven to 350F degrees. Line baking sheet with parchment.
  2. Place 6 RITZ crackers on prepared baking sheet. Top each crackers with a pinch of toasted coconut and then with one chocolate covered caramel candy. Bake for 4 minutes, or until candy softens (but not melted). Remove from oven. Top melted candy with a pinch of toasted coconut and with another RITZ crackers. Let cool completely before serving.
To make toasted coconut, preheat oven to 350F degrees and line a rimmed baking sheet with parchment paper. Spread coconut in an even layer on prepared baking sheet. Bake for 5 minutes or until browned, tossing once or twice while baking.
