Cinnamon Buttermilk Baked Doughnuts

Ingredients
  • 2 cups whole wheat pastry flour (or all purpose flour)
  • ½ cup packed brown sugar
  • 1½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ cup buttermilk
  • 2 eggs
  • ¼ cup honey
  • 2 tablespoons melted butter
  • 1 tablespoon vanilla extract
  • ¼ cup cinnamon sugar, for topping
Instructions
  1. Preheat oven to 425F degrees. Spray doughnut pans with baking spray and set aside. Put cinnamon sugar in a bowl.
  2. In a large bowl, combine flour, sugar, baking powder, cinnamon and nutmeg.
  3. In a separate bowl, whisk buttermilk, eggs, honey, butter and vanilla. Add to flour mixture, folding gently until combined.
  4. Pipe batter into the wells of the doughnut pans, filling about ¾ full.
  5. Bake for 8 to 10 minutes, or until a toothpick inserted in the center comes out clean.
  6. Remove from pan and dip the top of each warm doughnut in the cinnamon sugar and set on a wire rack to cool completely.
