Apple Buttermilk Pancakes

Ingredients
  • 1 cup whole wheat pastry flour (or all purpose)
  • 1 tablespoon packed brown sugar
  • 1¼ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • ½ cup unsweetened applesauce
  • 1 egg
  • 1 tablespoon oil (or melted butter)
  • 1 teaspoon vanilla extract
  • 1 apple, grated
Instructions
  1. In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt.
  2. In a separate bowl (or liquid measuring cup) whisk buttermilk, applesauce, egg, oil, and vanilla.
  3. Add buttermilk mixture to flour mixture and gently stir to combine. Fold in apple. Let batter sit for 10 minutes.
  4. Preheat nonstick skillet to medium heat [I heat my electric skillet to 325F degrees). Spray with cooking spray or rub with oil, if needed.
  5. Spoon batter onto skillet by the ΒΌ cupful (adjust to desired size) Cook for 3 to 4 minutes, or until bubbles form and the edges look set. Flip pancakes and cook for another 2 to 3 minutes, or until set.
