Broccoli Cheddar Hash Brown Bake
Yields: 12 servings
  • 1 tablespoon oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 3 cups steamed broccoli florets, chopped
  • 6 eggs
  • 2 egg whites
  • ½ cup milk
  • 1 package (1 pound 4 ounces) Simply Potatoes® Shredded Hash Browns
  • 1½ cups shredded cheddar cheese, divided
  • 1 teaspoon paprika
  • ½ teaspoon salt
  1. Preheat oven to 350F. Spray a 13x9-inch baking dish with cooking spray and set aside.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook until softened (about 5 minutes). Add garlic for the last minute and cook until fragrant. Reduce heat to medium and stir in chopped broccoli. Remove from heat and set aside to cool.
  3. Meanwhile in a large bowl, whisk eggs, egg whites and milk until combined. Add hash browns, broccoli mixture, 1 cup cheese, paprika and salt and stir until combined.
  4. Pour mixture into prepared baking dish. Bake for 45 to 50 minutes, or until center is set and edges start to turn golden brown. Sprinkle remaining ½ cup cheese over the top and return to oven to cook for 3 to 5 minutes until cheese is melted. Let stand for 5 minutes before serving.
