Pineapple Oatmeal Muffins
  • 1½ cups all purpose flour
  • 1 cup rolled oats (I used quick oats)
  • ½ cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1 8-ounce can crushed pineapple, not drained
  • 1 cup buttermilk
  • ¼ cup MELTĀ® Organic Rich & Creamy (original), melted
  • 1 egg
  • 1 teaspoon vanilla
  1. Preheat oven to 350F degrees. Spray 12-cup muffin tin with baking spray and set aside.
  2. In a medium bowl, whisk flour, oats, sugar, baking powder and cinnamon.
  3. In a large bowl, combine pineapple, buttermilk, melted MELTĀ® Organic, egg and vanilla until well blended.
  4. Add flour mixture to pineapple mixture, folding until just combined.
  5. Divide batter evenly among prepared muffin cups. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean.
