Oatmeal Raisin Muffins
Yields: 12 muffins
  • 1½ cups quick oats
  • 1 cup whole wheat pastry flour (or all-purpose flour)
  • ¾ cup packed brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 egg, lightly beaten
  • 1 cup buttermilk
  • ¼ cup oil
  • 1 teaspoon vanilla
  • ¾ cup raisins
  1. Preheat oven to 350°F. Spray a 12-cup standard muffin tin with cooking spray (or line with paper liners).
  2. In a large bowl, whisk together oats, flour, brown sugar, baking powder, baking soda, cinnamon and salt.
  3. In a separate bowl, whisk together egg, buttermilk, oil, and vanilla. Add to oats mixture, folding until just combined. Gently fold in raisins.
  4. Divide batter into prepared muffin tin. Bake for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Remove to a wire rack to cool completely.
