Three Cheese Spinach Pasta Bake
Yields: 6 servings
 
Ingredients
  • 1 package (16 ounces) medium-shaped pasta
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 jar (24 ounces) pasta sauce, any variety (I used Barilla Tomato & Basil)
  • 1 cup low fat ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • ¾ cup grated Parmesan cheese, divided
  • 1 teaspoon garlic powder
  • crushed red pepper, to taste
Instructions
  1. Preheat oven to 350°F. Spray a 13x9-inch baking dish with cooking spray and set aside.
  2. Cook pasta to al dente according to package directions. Drain and return to the pasta pot. Add spinach and stir.
  3. Add pasta sauce, ricotta, ½ cup mozzarella cheese, ½ cup Parmesan cheese and garlic powder to the pasta pot and stir until combined.
  4. Pour into prepared baking dish. Sprinkle top with crushed red pepper, as desired.
  5. Bake for 30 minutes, or until cheese is bubbly.
Notes
Make ahead: Skip preheating the oven, prepare through step 4, cover and store in the refrigerator until ready to bake. Then preheat and bake according to the above directions.
