Line a 8-inch baking pan with parchment paper, leaving 2 inches hanging over each side.
In a double boiler (or a metal bowl placed over a sauce pan filled with water), place white chocolate chips, condensed milk and butter. Melt over low heat, stirring constantly. Remove from heat, add peppermint or vanilla extract and ½ cup crushed peppermint candies.
Pour mixture into prepared pan and sprinkle remaining candies over the top.
Chill in the refrigerator for at least 2 hours to overnight. Cut into small squares and serve!
