Chicken Marsala with Parmesan Orzo
Yields: 3-4 servings
 
Ingredients
Chicken
  • 1 tablespoon oil
  • 1 pound boneless, skinless chicken breast, cut 4-ounce portions
  • 1 package Campbell's Skillet Sauces: Marsala
Orzo
  • 1 cup orzo
  • 1 tablespoon butter (I use light butter)
  • 1¼ cups water
  • 1¼ cups vegetable broth
  • ½ cup Parmesan cheese
  • 1 teaspoon dried oregano (or basil or Italian seasoning)
  • Salt and pepper, to taste
Instructions
  1. First make the orzo: In a sauce pan over low heat, melt the butter. Add the orzo, turn the heat up to medium-high and cook for 3 minutes. Stir in broth and water and bring to a boil. Cover and reduce to a simmer. Cook for 15 minutes, or until liquid is absorbed. Then remove from heat, add cheese and oregano, stirring to combine.
  2. While the orzo is cooking, make chicken: Heat oil in large skillet over medium-high heat. Add chicken, and brown on each side until mostly cooked through. Then add skillet sauce. Cover and reduce heat. Cook for 5 minutes, or until chicken is cooked through.
  3. Serve chicken over orzo, spooning any extra Marsala sauce over the top, and enjoy!
