Chocolate Banana Whole Wheat Waffles
- 1¾ cups whole wheat pastry flour
- ¼ cup unsweetened cocoa powder
- 1 tablespoon packed brown sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ low-fat buttermilk
- 2 overripe bananas, mashed (about ¾ cup)
- 2 tablespoons canola oil
- 2 eggs
- 1 teaspoon vanilla extract
- In a small bowl, combine flour, cocoa, sugar, baking powder, baking soda, and salt.
- In a separate large bowl, whisk buttermilk, bananas, oil, eggs, and vanilla until combined.
- Add flour mixture to banana mixture, and stir until combined. Let sit for 10 minutes.
- Meanwhile, preheat waffle iron. Cook waffles according to the manufacturer directions for your waffle iron.
