Chocolate Banana Whole Wheat Waffles
Yields: 4 to 6 servings
 
Ingredients
  • 1¾ cups whole wheat pastry flour
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon packed brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ low-fat buttermilk
  • 2 overripe bananas, mashed (about ¾ cup)
  • 2 tablespoons canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
Instructions
  1. In a small bowl, combine flour, cocoa, sugar, baking powder, baking soda, and salt.
  2. In a separate large bowl, whisk buttermilk, bananas, oil, eggs, and vanilla until combined.
  3. Add flour mixture to banana mixture, and stir until combined. Let sit for 10 minutes.
  4. Meanwhile, preheat waffle iron. Cook waffles according to the manufacturer directions for your waffle iron.
