Black Bean Jalapeno Hummus | alidaskitchen.com

Black Bean Jalapeno Hummus is an easy recipe for a healthy hummus made with black beans and jalapeno peppers.  This recipe is part inspired by my Jalapeno Hummus recipe and otherwise inspired by my love of black beans.  Even though hummus is traditionally made with garbanzo beans (chickpeas), in this recipe it was fun to mix things up a bit.  You can definitely taste the black beans, which goes amazingly well with the spices and jalapeno peppers. The tahini rounds everything out, giving it that hummus flavor that we all know and love….

With the Big Game just around the corner, I have been putting the finishing touches on my menu planning and coming up with some fun recipes.  In fact, it’s almost like planning for the holidays – mass quantities of lots of tasty foods to share with family and friends!

After making Sweet Potato Hummus, I have been looking forward to making more varieties of homemade hummus. This time I thought something a little spicy was in order ~ something like Jalapeno Hummus!  With just a few simple ingredients and a food processor (or blender), you are 10 minutes away from one of the best hummus recipes ever!  Jalapeno Hummus is flavorful without being too spicy.  All of the flavors blend very nicely, with a little jalapeno kick at the end.  The recipe can easily be doubled (or tripled!), making Jalapeno Hummus ideal for game day entertaining.

Sweet Potato Hummus - sweet, spicy, vegan, delicious!

Sweet Potato Hummus #SundaySupper

Sweet Potato Hummus is a little sweet, a little spicy and a lot delicious! This hummus is healthy, quick and easy to make, and vegan.

Sweet Potato Hummus from Alida's Kitchen

With Football season means it is tailgating time!  Whenever I’m tailgating, at a barbecue, picnic or party, the first thing I look for is something healthy, like fresh vegetables.  And if there is something healthy to go with them, such as hummus, I am a happy girl!  It just so happens that ‘tailgating’ is the theme for this week’s Sunday Supper, and I am bringing to the party a healthy treat to go with that ~ Sweet Potato Hummus!

Who would have thought the addition of sweet potato to a basic hummus recipe, along with some spice and some heat, would result in such a tasty (and healthy!) dip.   Paprika and chipotle seasoning really enhance the sweet potato and are otherwise complementary to the traditional hummus flavors.  Sweet Potato Hummus is also very easy to make and a wonderful accompaniment to a vegetable tray, pretzel crisps or whole wheat pita chips. It would also be great on a wrap or as a sandwich spread.

Be sure to check out what the rest of the Sunday Supper group brought to our Tailgate party!

Vegetable Quichetata with Roasted Garlic Hummus and Goat Cheese

As part of the Foodbuzz Tastemaker program with Sabra, I was invited to create an original recipe suitable for a cocktail party using Sabra hummus.  My head has been swirling with several tasty ideas ever since, and I am very excited to share with you my creation!

We all know the basic difference between a crustless quiche and a frittata.  A crustless quiche is made with milk (or cream or half & half) and mixed with your veggies/meats.  A frittata is made with no milk and with whatever mix-ins you want to use.

Well, when you use hummus, but no milk, is the hummus a substitute for the milk, or is it considered a mix-in?  The answer wasn’t quite clear, so I married the two, and the ‘Quichetata’ was born!

In this variation of a Quichetata, I used Sabra’s Roasted Garlic hummus, spinach, roasted red pepper and goat cheese.  It is amazing how well you can really taste the hummus, which is good and garlicky, and balances nicely with flavors of the goat cheese and vegetables.  The result is fabulous.  Made in a mini-muffin pan, these Quichetatas are the perfect hot h’ors d’oeuvres for your next cocktail party, holiday party, open house or brunch.

Hummus Quichetata
Yields 24 mini-muffin-size quichetatas

8 large eggs
6 tablespoons Sabra Roasted Garlic Hummus
1/4 cup crumbled goat cheese, plus additional for topping
1 cup chopped fresh spinach
1/4 cup chopped roasted red pepper
Salt and pepper, to taste
Cooking spray

  1. Preheat oven to 375 degrees.  Spray 2 12-cup mini muffin pans with cooking spray.  Set aside.
  2. In a large bowl, whisk eggs and hummus together until combined.  Add roasted red pepper, spinach and goat cheese, whisking until incorporated.  Season with salt and pepper, as desired.
  3. Distribute egg mixture evenly among mini muffin cups (cups will be full).  Sprinkle additional goat cheese over each cup.
  4. Bake for 10-12 minutes, or until eggs are set.  Serve immediately.

Disclaimer: As part of the Foodbuzz Tastemaker program, I was given Sabra’s hummus for free.  The details of my experience are exclusively my opinion, and I was not otherwise influenced or compensated.

Today we are officially back to school.  It is Adam’s first day of Pre-K, and we are all so excited!  Greta and I will miss him during the day, but look forward to seeing his smile every afternoon.  I know he will be excited to come home (and for Greta’s nap) so that we can make a snack together, do some dinner prep, maybe even make some muffins for easy breakfasts throughout the week.  Adam loves to help in the kitchen.  I always find the more involved kids are in the kitchen, the more likely they are to try what they make.

As we head back into the school year, I wanted to compile a list of recipes from my favorite food bloggers that are not only kid-approved delicious, but are also kid-friendly to make!  From no-bake bites to frozen fruit bars to easy snacks, fast dinners and more, this a great list to have handy.  By presenting healthy options, you empower kids to make healthy choices while having fun too!  …

In the months leading up to the holidays, there have been dessert recipes popping up all over the place.  While I’m never one to complain about a good dessert, after a while I start craving healthy recipes.  Lately it has been all about the avocado.  My kids love avocados plain, and I’ve been whipping them into smoothies, as pasta sauce, in place of mayo in sandwiches and salads, even using avocados in place of butter in baking!  Since over 75% of fat in an avocado is unsaturated, it’s a great substitute for foods that are  high in saturated fat.

While I frequently make delicious avocado recipes at home, it seems very few have made it on the blog.  That will change soon, as I get these recipes ready to share with you.  In the meantime I gathered over 75 wonderful avocado recipes from my favorite blogger friends.  Enjoy!  …
