We are big fans of breakfast for dinner!  Waffles, pancakes, scrambled eggs, it’s all good.  As I was inspired by learning about the exciting Disney Parks vacation package giveaway from Smucker’s® Uncrustables®, I thought it would be fun to create a recipe using those tasty peanut butter and jelly Uncrustables sandwiches!  I had everything on hand to transform those little PB&Js into another family favorite breakfast for dinner…Uncrustables French Toast!

To make Uncrustables French Toast, I used my standard French toast recipe but used Uncrustables instead of bread (or sandwich).  It was a pretty slick way to mix things up and tasted delicious!  For the topping, I simply dusted them with powdered sugar.  Another delicious topping would be to microwave jelly until melted and then drizzle it over the top.  Serve with a side of fruit and a salad, and breakfast for dinner is served!

Uncrustables French Toast

Yields: 4 sandwiches
Ingredients
  • 4 Smucker's Uncrustables sandwiches (any variety), thawed
  • ½ cup milk (I use skim)
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
Instructions
  1. Thaw Smucker's Uncrustables sandwiches according to the package directions.
  2. In a medium bowl, whisk milk, eggs, vanilla and cinnamon. Pour into a shallow bowl (a pie plate works well).
  3. Preheat skillet to medium heat and spray with cooking spray (or rub with oil or butter).
  4. Dip both sides of each thawed sandwich in egg mixture and place on preheated skillet. Cook until browned (about 4 minutes) and flip to cook the other side until golden. Serve with syrup, jelly or powdered sugar.
